italian wedding soup

This is a recipe from the Italian side of my family. The above picture is from a middle school project. I spent hours and hours collecting and typing up recipes from various people in my family. You will see many variations of Italian Wedding Soup but I really like this version with spinach. The original recipe calls for ground beef and ground pork but since I only had ground beef, that is what I used.

serves 8

For the meatballs:
1 lb. lean ground pork
1 lb. lean ground beef
1 c. breadcrumbs
1/2 c. Parmesan cheese
1 egg
1/2 c. finely chopped parsley
1 tsp. nutmeg
3 cloves garlic, minced
1 medium onion, chopped

1. Mix the meat with the chopped onion and garlic.
2. Add the egg, cheese, parsley, breadcrumbs, and nutmeg. Mix well.
3. Shape into small meatballs.

To make soup:
olive oil
3 q. chicken stock
2 c. frozen spinach, defrosted
1/2 c. Parmesan
2 eggs, beaten
1 onion, chopped
2 stalks celery, chopped
pre-made meatballs

1. Heat a thin layer of olive oil in pot. Saute onions and celery until translucent.
2. Add stock and boil for 20 minutes.
3. Add spinach and drop meatballs in a few at a time.
4. Before serving, whisk eggs into soup.
5. Garnish with cheese.



  1. yum..... i made some delicious meatballs this weekend, recipe from the infamous frankie's in nyc. they had, instead of the traditional onion and bell peppers, currants and pine nuts, and some parsley. so yummy!
