mashed black beans

Ok so I know this doesn't look that pretty but it is very tasty. It would be a great side dish to fajitas or tacos but it would work as a vegetarian filler, as well. I think I may even try making this one time and then frying it up, falafel style.

makes 4 servings as a side dish

1/2 Tbspn. of canola oil
1/2 small yellow onion, finely chopped
3 garlic cloves, minced
1 14 oz. can black beans, drained, rinsed and mashed with a fork
2 tspn. ground cumin
1 Tbspn. chili powder
ground cayenne pepper to taste

1. Heat on medium the canola oil in a saucepan. Add the onion and saute until translucent.
2. Add the garlic and saute for about 2 minutes making sure not to burn the garlic.
3. Stir in the beans along with all of the spices. Heat until the beans are warmed through. (Add a little water if needed so the beans don't dry out.)
4. Serve with sour cream or shredded cheese.

  2. i mash up cannellini beans with some lemon rind...but i've never tried black, sounds delicious!
